The Real Food Cafe's Crispy Deep-Fried Brussels Sprouts Recipe

No vegetable divides public opinion more around Christmas than the humble Brussels sprout. We found the trick and serve them fried at the Cafe. If you tried them and loved them, you might want to cook them at home, so here's a recipe. 

Ingredients:

  • Fresh Brussels sprouts
  • All-purpose flour
  • Water
  • Salt
  • Pepper
  • Cooking oil (for frying)

For the Batter:

  • 1 cup all-purpose flour
  • 1 cup cold water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For Serving:

  • Honey Mustard Dipping Sauce (or your favourite sauce)

Instructions:

  1. Prepare Brussels Sprouts:
  • Get fresh Brussels sprouts.
  1. Peel and Blanch:
  • Peel the outer leaves of the Brussels sprouts and trim the ends.
  • In a large pot, bring salted water to a boil.
  • Blanch the Brussels sprouts in the boiling water for about 7.5 minutes or until they are soft but still retain a slight crunch. The consistency should be fork-tender but not mushy.
  1. Drain and Cool:
  • Drain the blanched Brussels sprouts and cool them down immediately. Ensure they are completely dry and cold before proceeding.
  1. Flouring:
  • Lightly coat each Brussels sprout with flour. This will help the batter adhere to the sprouts and create a crispy texture.
  1. Prepare Batter:
  • In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of cold water, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
  • Whisk the ingredients until you have a smooth and slightly thick batter.
  1. Batter the Brussels Sprouts:
  • Dip each floured Brussels sprout into the batter, ensuring an even coating.
  1. Frying:
  • Heat cooking oil in a deep fryer or large, deep pan to 180°C.
  • Carefully place the battered Brussels sprouts into the hot oil and fry for approximately 5 minutes or until they turn golden brown and crispy.
  1. Drain and Serve:
  • Remove the fried Brussels sprouts from the oil and place them on paper towels to drain excess oil.
  1. Serve with Sauce:
  • Serve the crispy deep-fried Brussels sprouts with your favourite dipping sauce. The Real Food Cafe serves them with honey mustard dipping sauce.
